We use the Outdoor edge "Outpak" It's got about anything you would need. Love it. Their stuff stays nice and sharp too, We've had that pack since 2003, and its processed tons of game, ours and other peoples.. You can get them at most hunting shops. Here's there website, you can locate a dealer near you on the site.

I, too, use Outdoor edge knives...my brother's that is. I carry one of two buck knives that Cabela's sold a few years ago called ProGold. One with the gut hook and one without. Single edge with some fancy type of coating that is supposed to be extremely hard and holds the edge. I use the Buck's in the field then use my brother's knives when it comes to the skinning and what not. No sense in dulling my knives needlessly when I can do that to his.
It ain't the size of the gun but the placement of the bullet.

I bought a $200 German handmade Puma awhile back. It is extremelly hard to sharpen, but once it's there it stays pretty well. All in all I don't like it and have switched back to my favorite, a Kershaw Elk Skinner made in my hometown of Portland Or. Not Gemany or China. Easy to sharpen, easy to handle, just a good knife for about $35.

This is unuaual, but I have used only 1 knife while hunting for the last 35 years. A Buck, I think it's called the traditional? I get it pro sharpened every couple of years and touch it up the rest of the time. Its one of those items that never gets left behind on a hunting trip.

I am an A.G Russell knife man. Unless you try to cut rocks they hold a decent edge.

A good folding knife for gutting (Klien), and a Cutco for skinning. Smaller the better for gutting, less blade to cut your fingers.
