I found that spring bear meat is better than fall bear meat first of all.
Hams, steaks, and chops just dont taste good imho. The meat is oily and you have to cook it so long before you cook the possible trichinosis out of it so the meat is dry and much gamier than anyother meat.
Hamburger is bearable (pardon the pun) but would not be my first choice. Pepperoni and farmer sausage are your best options, 2nd would be jerky, or italian or dinner sausage. just make sure to cook it well!

Bear meat is my fav. I fry it up with garlic salt just like a steak.
Another good one is marinade it and then dutch oven it. Awesome meals.
My buddy gets his made into little smokies with cheese and jalapenos. They are very good also.
