Cody, I find myself shooting in usually TV or AV mode depending on the available light. I rarely use Manual Focus. I auto focus on the deers eyes and set the camera to use only the center focus point. Of course a tripod and a cable release probably help the most. But believe me I have the same problems as you do as well. That's what makes is so fun. It is not easy.
