I have a real good video for butchering you your own big game animal. This video uses the whole animal.
I like doing it my self.....is there another good video or book with pics on butchering one that is in quarters?

What is the video you have, I would like to see it. We too do all of our own butchering. Lot cleaner cutts of meat that way.

If you are butchering in the field to pack out,cut all 4 legs of at the "knee",cut front shoulders under "arm pit" and continue until shoulder is removed from body.Cut around pelvis until you can see the femur ball and remove the hindquarters from body.Cut loins off of rib cage and your done.Dont bother gutting elk first this way is alot less work, and if you are dragging the quarters leave the hide on so they dont get covered with dirt and pine needles while dragging.

Most of the time the Elk I kill are two canyons away from the truck. I have boned all my out west big game kills for many years. I don't back pack anything I don't eat. Except the antlers.
