Dead coyote

This might be a dumb question but here goes it.
What do you do with coyotes you shoot? I've never killed and animal I didn't eat. Learned that lesson the hard way when I was a kid and knocked off a stellars jay and my dad made me eat it.
A few years ago a friend in a neighboring Elk camp got a cougar and the meat was surprisingly good. Anyone ever eaten coyote? Are there still bounties? Just what do you do with one once it's down?

Check out this disscusion same question. most people leave them where they kill them because they are considered pests in most places
