meat processing

so i was wondering who all you guys use to process your game. i can do my own deer but with drawing that moose tag i would like to have some specialty stuff done to it if i get one... like summer sausage and salami type things the processor around here dont do anything like that ... i was planning on using someone around slc or south down towards cedar which no one in cedar does specialty stuff.
