Venison Recipes

Hey guys! Due to the busy hunting season this year i wasnt able to spend the time to kill a buck. But i wasnt going to go without atleast a little meat in the freezer so I harvested a nice doe a few days before my wedding and moving up to school. My dad was always the one who prepared the venison in the house. His recipe is pretty simple but i loved it. From what i remember seeing he just mixed up a bunch of flour and salt and pepper and probably a few other spices then coated the steaks and fried them. Pretty simple but tastes great!

What do you guys do to help with the gamey taste? I was thinking of marinating it in coke or wine or something like that. I would love to try out a few different recipes. Anyone have anything they would like to share?

Also, what kind of jerky recipes you guys use?

Believe it or not but I've used margarita mix to marinate venison to tame the gamey taste, then use whatever recipe you like.

My dad soaks meat in a salt water with small amount of white vinegar for 48 hours before cooking, he changes water every 8 to 12 hours, the less red the water looks the better, then he marinates 12 hours before cooking

Here is the jerky recipe I have been using...

1 lb. venison, cut in 1/4" strips
1 tsp. seasoned salt
1/2 tsp. garlic salt
1/2 tsp. pepper
2 tbsp. liquid smoke
1/3 c. soy sauce
1/3 c. Worcestershire sauce
Pinch of crushed red pepper

(If you do more than 1 lbs, just multiply the contents by the number of lbs. Obvious I know)

Combine ingredients in separate bowl
Place meat and mix in a ziplock and marinate overnight
Then place in dehydrator or smoker until done

I think this is the best wet recipe I have used. This year when butchering my deer I marinated a batch then froze it in the marinade. Should be interesting. But if you just marinate it 8-10 hours, it will turn out good. My 3 year old daughter eats the stuff like candy. lol

I put my deer in a cooler with ice under it and over it . Ileave the plug open and one end of the cooler up a little so it stays drained. I keep it iced this way for at least five days. Then I girnd slice or dice and put it in the freezer. Ends up with little or no game taste. I soak shoulder and rump roasts in butter milk over night then cook em just like beef. No bad twang but still tastes like deer whitch is why I kill (harvest) deer.

haha Im fine with the gamey taste! Being the carnivore i am ill eat any meat i can get my hands on. Its my wife i have to prepare things for. We just got married about a month ago and she has never tried venison so i have to make a good first impression! lol

Your recipe sounds really good phillyb! Ill try it and let you know how ti turns out! I am marinating the first batch right now. I pretty much just threw together some salt, pepper, brown sugar, and teriyaki sauce. Hopefully it turns out ok!

lol I tried that with a small batch, alittle of this, a little of that. Let me tell you, seasoned salt goes a long way. Only a little is needed. Mine will be great for flavoring chili in the next few months
